MEDITERRANEAN QUINOA RECIPE

2 cups                 Quinoa

2 cups                 Water

2 cups                 Broth

——–

Drizzle                Olive Oil

——–

1                          Double Handful Cherry Tomatoes

halved or quartered

1 can                   Artichoke Hearts — chopped

1                          Small Block Feta — crumbled

1                          Large Handful Kalamata Olives

1                          Large Handful Parsley – chopped

 

 

 

 

  1. Combine quinoa, water & broth, bring to a boil, reduce heat to low and cook covered for 12 minutes.

 

  1. Prepare all other ingredients while that cooks.

 

  1. When quinoa is done, drizzle with oil and stir in all other ingredients.

 

 

 

 

NOTE:  For a nuttier flavor dry sauté the quinoa until golden before adding the liquid.  (or toast or sauté in oil)
